If you go for a camera that shoots RAW (most advanced point-and-shoots, and all mirrorless and DSLRs), you can tweak the color temperature much more effectively than with JPEG. It seems like color balance is always wrong with JPEGS in the mountains; I think it gets skewed by the UV at higher altitude.
I used to think RAW seemed like too much hassle, but then I found a free open-source program called "Raw Therapee" that works great. Now RAW is all I use.
