I have a pair of OR GTX pants where they used "no stitch", bonded, construction next to one of the zippered hand pockets.
The face fabric has de-laminated back from the zipper about 1.5", but that is all, the zipper remains attached and bonded well to the fabric beneath from the back side.
The pants are in great shape otherwise and I really don't want to send them in for a repair I might be able to do myself.
Although I have a decent Viking sewing machine I don't sew very well and sewing is not a super good option for me
So here are my 2 questions:
1) Has anyone ever used the heat activated 1/2" fabric bonding tape that you can find at places like JoAnne fabrics on Gore-tex laminate? If it holds then it would make a nice neat repair. If not, it would probably leave a mess.
2) I am aware I could probably do the repair with Seam grip but it would not be as neat. Does anyone have any other suggestions ?

The amount of heat to activate the tape will cause the GTX membrane to delam, likely of an area larger than you're trying to fix. In my book that qualifies as a mess.
What is your objection to sewing it?

A practical and obvious repair lends character to your gear and authenticity to your appearance on the whole. Be proud of your rips and abrasions!

I'll probably go for the 'ol Seam Grip repair and try to be very neat.

There are not a lot of liquid adhesives that work well on all kinds of surfaces. If you go that route a Polyurethane adhesive (Titebond) would be the best bet.
Seam Grip is a Urethane based product which contains the accelerator in it (normally sold as a two part epoxy). It will retain a bit more flexibility, but is not as strong of a bond as a Polyurethane.
Another option is 3M Scotch 411P Outdoor Mounting Double Sided Tape which is fairly strong stuff.

I just put tenacious tape over de-laminated goretex. It's probably more waterproof than it started out and you obviously won't notice a tiny little patch that's not breathable.

Due to how close the edge of the face fabric is to the zipper teeth (like 2mm) tape won't have enough area to grip on the edge that has de-laminated. The zipper pull actually used to ride over the edge before it de-laminated.
I'll look into a more appropriate adhesive, thanks for the suggestion.
