Anybody know any real snowshoe hikes in W WA that aren't just roads or popular trails?

The beauty of winter is that you aren't confined to roads or trails as long as there is sufficient snow on the ground. Look at a topo map, pick an objective that you find interesting, and then determine your own route. Blewett Pass area is a great place for this.

and educate yourself (if you haven't already) about avalanches. How they happen, how to avoid them.

The Hyak Lake / Nordic Pass snowshoe route is only on a groomed ski track for a very short distance. Lots of information on this forum about that.
Hex Mountain is a popular one. But there are roads at the beginning, and some confusing access issues which you can read about on other threads.
The hill side above Roslyn has lots of routes you can snowshoe with only the occasional road crossing. A plus is stopping at the Brick afterward.

I like Hovey Creek. Pull off Highway 97 two miles past Mineral Springs coming out of Cle Elum. Park right next to the highway at FS road 9714 on the west side of the highway, and head up the road, then strike out into the gentle hills, no avalanche danger whatsoever. Just dry snow, ponderosa forest and the brilliant sun if you go on the right day. You can go far here without company, and without undue hazard.
I don't do much snowshoeing because my car strenuously objects to it. But it seems that Highway 97 offers tons of options for the snowshoer who wants to blaze their own trail.

I agree, mostly W of Blewett Pass. The options E of the pass are limited.
