Way too hard to select only one. So what cover version has caught your attention?

Things we said today, covered by Dwight  Yokum really opened my  eyes  as  to  what great lyricists John and Paul were.

Other fine versions of While My Guitar Gently Weeps include Jeff Healy Band [with guest lead by George Harrison] and Carlos Santana's version with vocals by India Arie and YoYo Ma on cello.
