I'm 6'4" and Osprey is the only line I've found to fit my torso. I just bought the Levity 45 and it's a really nice pack to me after using an Atmos 50 and 65 for years.
Just took the Levity 45 on a backpack / scramble for the first time. Yes it will do the job on and off trail.
I bought an Osprey Levity 45 last Fall and used it for the first time backpacking and scrambling the ridge on and off trail it carried well and the airscape suspension kept my back cool.
Rather than having your sit pad in the side pocket, try it between the Osprey back webbing and pack. I have the Thermarest sit pad and unfold it double thick, it stays put there and takes up no room, but is still easy to access.

Looks pretty good. Although once you've gone McHale its hard to look at anything else.
