Any recommendations? I have a couple fleeces, they don't breathe very well at all, and feel clammy if they wet out.
For fall hikes and winter xc skiing.

Don't sweat in winter. If your mid-layer is getting damp you are wearing too many layers. I skin in just a thin base layer much of the time in the Cascades. If it is snowing, a base layer and a shell with vents open. I layer back up quick for stops and for heading downhill.

My “solution” is to bring an extra underlayer (top). If I stop for long, i’ll Put it on. Wintertime is just tricky. I try to not wear a jacket on the way in, so hopefully don’t sweat as much.

I have some Craft base layers. I can saturate them with sweat, under GTX Shake Dry, and it'll be bone dry 10 minutes later if I ease up. I bought a couple dead bird base layers when they went on sale this winter that have been excellent with sweat management too.
I like to ski (Nordic) fast. I enjoy pushing myself hard, too. I'll sweat in just a base layer if I'm skiing for time. It takes about ten minutes for me to warm up at first, and that's after meandering from the parking lot to the trail and getting everything ready.
The cold didn't bother me very much until I started getting close to 40. 👴

Not that specific brand/model, but other mesh base layers. I find they work quite well and keep a dry layer next to the skin even at high output... It is advisable to apply tape on your nipples to avoid irritation.

Ha! I have a photo of me with bandaids over my nipples, like a stripper, after I ran a 10k. So that's why they make special running shirts and body glide.
I'll spare you the horror of seeing it.
I have a few mesh bike jerseys, and I agree they're like magic.
