I was wondering...for those carnivores that cook a turkey, how many people make turkey soup the next day. Its something I always look forward to doing.

Around here the carcass gets hacked up and turned into stock, along with vegetable trimmings. Add neck and giblets, but not the liver, which imparts a bitter flavor. The meat becomes soup, sandwiches, enchiladas, etc. - even frozen if there's way too much.
No turkey this year however, besides the one currently at the keyboard. Home made samosas, chana masala, and spicy chicken for a smaller than normal audience.

Being extra high risk because of both age and health, I spent Thanksgiving alone but did a lot of cooking. However, my turkey consisted of a 3.5 lb. chunk of turkey breast, which I slow roasted. Nice and tender, several meals of sliced breast, but nothing for soup.

now I have 12 soup bricks in the freezer. Keeps great for months.

I made the broth on Thanksgiving evening, simmered the carcass for a couple of hours. I was too tired to put any vegetables in it. Tonight I'm making turkey and rice soup. Smells yummy, I think it's almost ready. I'll be needing to put a bunch of meat in the freezer, a 14-lb turkey was way too much for the 4 of us, and that was the smallest they had when I bought it.
Thanksgiving leftovers are my favorite of the year. It's probably the gravy, I don't make gravy very often!

The wife and I take turns cooking. I'm up to bat again on Monday and yup, turkey soup is on the menu.
