Having family in Eastern Washington I’ve made that drive too many times.
I-82 best section is the three ridges (Manastash, North & South Umtanum) that provide views of Mt Rainier and Adams.
Yakima is not a particularly good stop, too much local traffic at all the strip malls.
Mt Adams will visible for much of your drive.
An alternate is 90 to Vantage, and 240 along the Columbia River and Hanford Nuclear Site. Ginkgo Petrified Forest. Some really cool Rock formations along the River. Hydro-Electric Dams, and the some of the Hanford sites are visible from the road. Potential to change your to/from route.

I just got home Tuesday from my journey...
1900 miles round trip!
As it worked out I did not go to Lake Tahoe to meet up with family but went to Alameda instead... you have to roll with the flow... LOL
I left early on a Sunday and took I-5 to Grants Pass and cut down to Crescent City and HWY 101 all the way to the cut off for Alameda.
Had an amazing visit which of course went by way to fast!
I took 880 to 80 to 505 and I-5 all the way back to the HWY 101 cut off near Olympia and stayed on the East side to Port Townsend and back home on HWY 20.
Highlights of the trip were all the mountain passes, Hwy 101 in CA and WA and the cut off to Crescent City.... Amazing scenery and a wonderful ride!
It's all about the fun, oh and maybe the chocolate - half fast
