I am vegetarian so my options are somewhat limited. I usually pack pita bread, cheese, mustard, mayo packets and maybe a fresh vegetable like tomato or zucchini for the first day. I also bring along Peanut Butter and some dehydrated hummus to eat with the pita. Also I always carry have some ramen with me just in case the weather sucks and I want a warm lunch. Add some Peanut Butter to the ramen noodles for a delicious peanut sauce type dish.

ForestGeek - your options are not as limited as you think There is so much you can eat! (I went for the most part vegan this past year for health reasons and have found we eat in ways better - and tastier!) I am working on tagging the recipes better on my website with Vegetarian and Vegan labels

Thanks sabar. You are right, I know I'm not all that limited, but I guess I was just meaning that since jerky, tuna, salami, peperoni, many freeze-dried foods and soups are not an option, we vegetarians have got to get a bit more creative. I've been vegetarian the whole time I've been a backpacker, since 1994 (vegan for 2 years), and very much enjoy getting creative with trail food. Oh, and I will definitely take a look at and utilize the recipes on your website. Thanks for posting that.
