the one on top turned out pretty good. for 8" shallow pan: filling: 2 apples about 1/2 cup dried tart cherries (soaked in hot water about 20 minutes before mixing in) cinnamon, nutmeg, ginger about 1/3 cup sugar about 1/4 cup cornstarch topping: equal parts (about 1/3 cup each): chopped walnut, oatmeal, brown sugar, butter cinnamon, nutmeg, ginger cream ingredients together and smooth over filling with fingers. go a little heavy-handed with the thickener (cornstarch) because the brown sugar and butter are going to melt down into the filling. go light on the sugar in the filling for the same reason. bake @ 400° F for 40 minutes I've done this with dried cranberry also. Ocean Spray "Craisins" didn't work well. TJ's organic dried cranberries worked quite well. I've found some dried blueberries will work also, but I can't recall which was which now. Be sure to soak the dried fruit before adding to filling or they'll have the texture of jujubes in the pie.

Having judged berry pies for the county fair let me say the best one I ever judged was an apple/cranberry. Let me also say you don't want to judge pies at a fair, or anywhere else. The person who made the pie will be watching your face trying to guess if they won. AND, this is the biggie, you'll have to contend with fuzzies. Fuzzies and pie, what is he talking about? Hair balls, hair, stuff that shouldn't be there. As soon as you see it the pie is disqualified. Fortunately you can spot this stuff before it goes in your mouth. I was "famous" at work and with friends for a while as the local paper came out and took photo's during one contest. I made it on to the first page.

Ski, I think you have pie making down to a fine art. I remember the pie judging and how all the little kid's pies had these big ole thick crusts around the edge. Wouldn't mind judging yours. Somehow I don't think I'd find any fuzzys.

you mean those tin rings you place over the pie to keep the edges from scorching? no... never used one. 400 F for 40 minutes. every time. racks at lower-mid level. have to crank out a couple more tonight.

I got all excited at work. Went in to kitchen and there were two barrels on table, rhubarb sticking out OH BOY, PIE! I thought then saw that they were rhubarb plant starts someone brought in after thinning their patch. I have no yard and I am sure my neighbors would not appreciate a rhubarb patch on the walkway of the second floor. sigh
