These two are south of Snoqualmie Pass in the maze. Both located right off the PCT and would be short detours.
Snowshoe Butte Lookout Site
This one has big prominence and fantastic views. Just the trailhead road is nearly 5,000 feet with a great view at the end.

Big Creek Lookout Site
All the information I had shows this lookout on a different knob so I walked right past it at first. Because the main trail doesn't go to the lookout, the foundation is still in ok shape.

How to find the lookout
-------------- Done with peakbagging, pretty much lookout bagging at this point.
More great stuff Eric. I went there about 20 years ago when there was a logging operation in the area. The watchman had no idea there used to be a lookout there. He showed me a cache site in the woods below ( south) of the lookout site which was apparently a remote sensing site for the weather station at Stampede Pass. Most of it was falling apart but was still filled with old beakers and humidity sensors etc. Very cool place.
