Breakfast: We used to take an oat-based granola. We're not GF but as far as I can remember it didn't contain wheat. Can't remember the brand, but it was cheap, in the Winco cereal aisle, in a (yellow I think) milk-carton-type container. Other times: Tortilla chips? Either commercial or fry up your own.

My wife has celiac, and for our Colchuck/Enchantments trip a few weeks ago, she made her own freeze dried-boil in bag meals. She even dehydtrated some spaghetti sauce in to powder form, great with rice noodles! Lots of instant potato dishes, polenta dishes, rice noodles, instant rice. The instant rice/milk/raisin/cinnimon-sugar warm cereal was a great breakfast! My favorite dinner she made was some sort of spicy potatos w/ bacon bits! and oh, Trader Joes has some really good GF granola!

Cellophane or Green Bean Thread noodles cook up really fast and are full of calories. They are made of mung beans and are gluten free. My very picky 12 year old loves them.

for my most recent trip, I made and dehydrated the following: chili chicken rice soup ground turkey, rice, veggie mix amaranth, fire roasted tomatoes, and turkey kielbasa eggs and potatoes All gluten and dairy free, because intestinal "issues" on the trail are unpleasant!
