Since kicking the coffee habit, I don't usually bother cooking breakfast anymore, except maybe on basecamp days if I'm not in a hurry.
I'm in a major breakfast rut: an energy bar of some sort and maybe some dried fruits and/or nuts. Or, if I bother with the stove, instant oatmeal.
Any other ideas?

Coffee is a breakfast staple for me, a non negotiable requirement. I like cookies I can dunk in my coffee. Cookies are a low maintenance food, they dont require any special packaging or temperature control, and there is no leftover parts.
You need a sturdy cookie for dunking in hot liquid, so you dont end up with that pile of gunk in the bottom of your cup.
The best I have found is Trader Joes Oatmeal Cranberry Dunkers with white fudge drizzle.
A stack of those, paired with a mug of steaming coffee, hot enough to instantly cook any stray mosquitos that might fly in, and I'm a happy camper.

If you eat instant oatmeal, add in stuff like coconut cream powder, shredded coconut (natural only), dried blueberries.
Or freeze-dried mangoes. Yum.
Myself....before braces I would take a tortilla and layer on PB or almond butter, honey and granola. Munchy!

Sarbar suggested breakfast burritos could be made with the Mountain House Eggs and Ham and Peppers meal. Just bring tortillas to put the hot, rehydrated eggs into, and shredded cheese to add on top of the hot eggs.

If you happen to have bagels, cheese, and summer sausage for lunches, toss 'em all in the frying pan for a super yummy breakfast sandwich. The frying brings a lot more flavor from the generic meat-stick.

Or fry up a Spam Lite Single, put on a bagel (toasted in the pan after, in the fat) and some cheese.

I've gotten sick of instant oatmeal so I'm trying out different things. Lately I've been bringing an apple and one of those tiny Jif peanut butter cups. Or a breakfast cookie or bagel.

Quaker instant grits + cheese is a nice break from oatmeal. Starbuck's Via instant coffee is very tasty too.

If anyone wants to see some more ideas on breakfast for the trail, here is the breakfast pages on my website.
Coconut Berry Oatmeal is a good one for a higher fat breakfast if you like oats.
In all honesty though I would prefer eating mashed potatoes for breakfast. Add in cheese, bacon, etc and it fills you up, gives a hit of potassium - and is fast to make. Breakfast Taters.
