I find Bison, in steak or burger form, way to lean to enjoy. It just doesn't have a very good texture, and the flavor can be lacking. Great in stews or any kind of braising, not so good grilled. --Gray

Handled right it is supremely tasty! I like the earthy flavor though. On Bison steak, it has to be cooked by someone who knows the meat. A restaurant that isn't used to it ruins it. Part of why we like it so much beyond the flavor is how lean it is....

i like bison also. angus too. here in pocatello were lucky enough to have a local rancher who sells grass fed beef and lamb, not sure which breed. i buy it at our local food co-op very good but it does taste different more flavor. all of these lean meats have to be cooked differently to turn out good.
