One thing to keep in mind about "fresh" jerkey - the shelf life may be much shorter. I bought some jerkey a year or so ago on the way home from a hike and within a couple months it was starting to mold. Maybe I got a bad batch but I would advise against buying a large supply - it probably won't last as long as the mass produced stuff with preservatives.

I don't think you got a bad batch, it just doesn't keep as long. We had the same experience--bought a bunch of homemade jerky at that little meat market in Roslyn and ended up throwing a bunch of it away. It's great stuff, by the way, just don't expect to keep it as long as industrial-grade jerky.

There are no preservatives in Trader Joe's jerky. It is "best" if used within three days once the sealed package is opened. I don't know how long it would take to get moldy, since I usually eat a whole package at one sitting.
