my mom brought me back a present from her week-long visit to Long Beach.  nothing beats Willapa Bay oysters. (Argentina shrimp were on sale at Safeway yesterday.)

hmmm... that batch was about 3/4 of a cup of Franks Hot Sauce, a splash of some raspberry vinegar (because I'm out of red wine vinegar), a splash of olive oil, 8 twists of the peppermill (black pepper), about two teaspoons of salt, a good sprinkle of garlic powder, a couple firm shakes of "Cajun's Choice" Creole Seasoning (mostly a salt and red pepper mix), and about a tablespoon of Dijon mustard.

never the same twice - heat level varies from one batch to the next, generally influenced more by the amount of mustard and black pepper (unless I'm mistaken.) this batch wasn't really really hot - sometimes I'll get heavy-handed and end up with seared lips.

the slits are necessary to allow the steam to escape - otherwise they'd blow open in the oven.
same reason you always cut vent holes in the top crust of a pie.

No, not by any means. Just "spicy". I try not to get it too spicy - because then all you get is a burned tongue and you can't taste anything.

I don't think I've ever made a pie with a top crust. I clearly haven't made enough pies!

My meat/potato pockets seemed to do ok without vents, although the outside was more like pizza crust than pie crust. Or maybe the type of filling makes a difference?
