Somehow swiss cheese never seemed to make it into my pack before. The grocery store in Twisp was out of their in-house smoked cheddar (damn them!!) so we got a chunk of Jarlsberg. It got a little bit soft, but held up *really* well and tasted great. None of the oiliness that oozes out of cheddar after a few days.

If you haven't ever tried it, mac n' cheese made with Swiss is always a great (and easy) one pot carb fest.
I usually carry Swiss because it is one of the few cheeses made in low sodium that is easy to find

Another cheese I discovered recently is "reggianito" (as opposed to reggiano). The stuff I got was from PCC. IMHO it tastes better than reggiano/parmesan, is not as salty as some cheeses (but I'm sure is still saltier than Swiss), and travels very well due to its low moisture content. GREAT on crackers.

Swiss cheese is an excellent hiking cheese. Try also a classic Le Gruyère Premier Cru, a nice Raclette, or similar hard, mild nutty cheeses like a Cordoban Mitica (like a Andulsian-Spanish cross of a classic Emmenthal with Manchego)

We tried this recipe this weekend and it was pretty great but next time we'll add some parmesan and maybe some bacon plus more black pepper.

I so miss ham, bacon and well...almost anything off of the most glorious animal - the piggy.
Once in awhile I give us a treat and we get a tiny bit. And oh it tastes so good
