Getting ready for our big backpacking trip and nearly done with all the dehydrating! Today I started cooking up some soaked red beans that I bought in a large bulk bag. The soaking process sure sapped the color out. They took on a mottled tan color. Is this normal?

been years, but when I did it, I used small red kidney beans. I was trying to make up my own "red beans and rice" mix without all the salt that comes in the pre-prepared box mixes. the beans retained their color, but they all kind of broke into pieces in the dehydrator.

It is OK - and even OK for beans to pop open while drying. Still good and edible, if maybe not so pretty ;-)

yeah, they were fine! just kind of surprised me that they kind of "blew up" in the dehydrator - sort of like popcorn. finished product was okay, I just stopped hauling rice because it seemed a poor return on investment: nutritional value, calories and carbs vs. weight and cooking time.

I have taken the really ugly ones and ground them, then you have bean powder. Makes a great thickener or you can use it to make non-garbanzo bean hummus ;-)
