Getting ready for our big backpacking trip and nearly done with all the dehydrating! Today I started cooking up some soaked red beans that I bought in a large bulk bag. The soaking process sure sapped the color out. They took on a mottled tan color. Is this normal?
been years, but when I did it, I used small red kidney beans. I was trying to make up my own "red beans and rice" mix without all the salt that comes in the pre-prepared box mixes.
the beans retained their color, but they all kind of broke into pieces in the dehydrator.

yeah, they were fine! just kind of surprised me that they kind of "blew up" in the dehydrator - sort of like popcorn. finished product was okay, I just stopped hauling rice because it seemed a poor return on investment: nutritional value, calories and carbs vs. weight and cooking time.

I have taken the really ugly ones and ground them, then you have bean powder. Makes a great thickener or you can use it to make non-garbanzo bean hummus ;-)
