Cowboy Wrap is an umbrella term for a bunch of stuff, whatever ya got, all rolled into a tortilla and eaten as a wrap.
Summer sausage, peanut butter, honey, hot sauce, and beans, for example. heavy on the beans. just don't go TOO big TOO late at night, y'end up tent ridden and unable to hike out the next day! And make sure y'have TP on hand.

I never knew the name for this before. A hiking buddy of mine likes the combo of summer sausage, nutella and big chunks of colby jack cheese. It doesn't sound all that appealing, but it's delicious!

Freeze dried beans, spicy freeze dried bean dip and freeze dried guacamole worked pretty well on my last trip. My usual breakfast on the trail is freeze dried breakfast scramble (eggs, potatoes and sausage) wrapped in a tortilla. If it's too runny, jes' th'ow in some mo' beans...black pepper is always a useful addition.
"Wraps"? Really? It's a Boo-Reeto!
