Not sure if any of those APK have been updated to work with the 7 series but you can also disable HDR by going to advanced settings and turn off "exposure" (adjust brightness and shadows). You can also fine tune HDR via the shadow slider to the top right in this GIF:
https://ai.googleblog.com/2020/08/live-hdr-and-dual-exposure-controls-on.html Edit: after doing some research here's a modded APK for the Pixel 7 series: https://www.celsoazevedo.com/files/android/google-camera/dev-bsg/ It's one of the first mods of google camera 8.7 (which was released with the 7 series) so not all options are yet available (such as the ability to adjust sharpness) but eventually you should be able to adjust default processing to your heart's delight. In the interim you can use version 8.6 to tweak processing. Whatever you think of the default processing I don't see it as a reason to avoid the 7 Pro as other flagships are even more aggressive in that regard, and worst case you can tweak it:
