Is it possible to be able to like individual photos in a post? Not only do I want to show my appreciation for a particular photo (without having to quote it), I think it's great feedback for the poster/photographer too.

Unfortunately I think it would mess up the display of photos as would require displaying a like button and reactions under each photo. You can always highlight individual photos in a reply, more effort required to do that but better overall compromise.
