Apparently it's no longer being made, but the good news is that the chef has thus released the recipe in one of his cookbooks. It is habanero-based, but has some other yummy additions. I'll have to try out a few of the others mentioned on this thread. Here's the Inner Beauty recipe for those who are willing to make their own batches of hot sauce:
Quote: | Recipe From : Big Flavors Of The Hot Sun by Chris Schlesinger
15 habanero chiles -- roughly chopped
1 ripe mango -- peel, pit, mash
1 cup cheap yellow prepared mustard
1/4 cup packed brown sugar
1/4 cup white vinegar
1 tablespoon curry powder
1 tablespoon ground cumin
1 tablespoon chili powder
salt and pepper -- to taste
WARNING: Hottest sauce in North America. Use this to enhance dull and boring food. Keep away from pets, open flames, unsupervised children, and bad advice. This is not a toy. This is serious. Stand up straight, sit right, and stop mumbling.
Be careful no to rub your nose, eyes, or mouth while working with habaneros. you may actually want to wear rubber gloves while chopping and mixing -- these babies are powerful.
This style of hot sauce, widely used in the West Indies, is basically habanero peppers (also known as Scotch Bonnets), fruit, and yellow mustard, with a few other ingredients thrown in. Use this recipe as a guideline. Habaneros are at the top of the chile pepper heat scale, so feel free to substitute other peppers of your choice.
Funnel the sauce into an old pint liquor bottle, then let your imagination run free as to what whopper you can lay on your guests regarding its origins. If you're having trouble, here's a start: "One day in Jamaica I was in this dingy bar and met this old guy who..." and you take it from there.
METHOD:
Mix all the ingredients together and stand back. This will keep, covered and refrigerated, until the year 2018. Be careful though: If it spills, it will eat a hole in your refrigerator. If you ever want to dispose of it, call the local toxic waste specialists |
I'm not a fan of "the man" - IMO Dixies' infamous sauce only has heat but no flavor. A chef pal speculates that they have extracted just the heat from peppers. I'm much more into sauces such as Inner Beauty that have actual flavor in addition to intense heat.

I have never ate a pepper that I didn't Love. A day without spice, is a day not worth living. With that said Blair's Hot Sauces are without a doubt the most hottest I've found, they got some extracts that have a 2,000,000 scoville rating.
Here's one of my favorites.

I like it hot, and the only way we survived Nepal was a trusty jar of chili pickle. On the other hand some of these seem like no flavor just heat. like I unloaded a can of bear spray in the jar,is a great lifesaver.

Best table sauce: Jalapeno Hot Sauce from Adobe Milling Co in Dove Creek, Colorado. I buy it mail order by the small bottle or quart. Real nice smoky flavor - and not blow your brains out hot.
Best salsa: Herdez Salsa Casera.
A friend recently turned me on to a great dip recipe: Mix one 7 oz can of the Herdez with a small tub of cottage cheese. yeah....sounds like it'd be yucky - but it's great.

Here's my arsenal:
 I heart hot sauce
Predator hot sauce is a must-have. Very tasty, but extremely spicy and to be used sparingly. I generally dilute a few drops into a couple ounces of Tapatio and pour that over a burrito or tamale.
There's a reason Tabasco is a classic. One of my faves.
Stone Brewery's Double Bastard hot sauce is really outstanding.
If you're really into extreme spice, drop $200 on a bottle of 16 Million Reserve. It's essentially pure capsacin - literally tons of peppers go into making a single pound of the stuff. I think it's a small batch, one time deal so get it while it's hot (ouch - couldn't resist )

I like rooster sauce, tapatio, tabasco, and Franks hot pepper sauce.
I also grow some peppers and make the homemade stuff, it's good fun. Although you have to be careful with habaneros, they make an excellent sauce. I like to douse some chicken with halben sauce and then bbq.

I usually experiment with different ones, never having less than five at home. My usual source is Firegirl. Great descriptions and search engine, and the folks back there are very helpful as well. Plus you can't really beat the selection...
