Anybody carry a Canon 5d? I'm picking up a 5d MkIII, any suggestions on how to carry it hiking?

Inside a LowePro camera bag, slung across one shoulder.
It's not the body that's the problem, it's the body+lens that becomes weighty.
If you carry a MarkIII with a lens or two, plus a few filters and a few spare cards, and of course an intervallometer, the weight adds up.
I usually carry the goto lens (24-70) attached to the camera body inside the LowePro and the backup lenses in my pack.
But I must admit that I don't hike very far with the full camera kit - the L lenses are just too heavy.

On a boat. Sorry, I know Tom usually makes this joke, but I couldn't resist (search the site for "boat anchor" if you haven't heard it before).
More seriously: I carry my 5D and 17-40L lens, assorted filters, remote release, extra battery/memory card in a belt holster. It's large and bulky, but I've got used to it. My 70-200L telezoom and tripod go in/on my backpack, but I don't carry these on really long hikes (20mi plus), if I have to travel fast.

Or one uses a lighter camera system.
Dear reader, look around you - how many cameras are now in your home?
They are insidious -from the 5Mpx bundled into your phone to the monolith inside the LowePro bag, with a few point-and-shoots, and maybe an ultra-zoom, in between.

I have a

It has an expandable compartment that can be used for either miscellaneous stuff (jacket, snacks, etc.) or a big telephoto lens (e.g., 100-400 f4.5-5.6L).
On shorter stuff where I don't need ten essentials, I will go packless and just bring that bag, and on longer stuff, I will use the bag in its smaller form with the big zoom lens in the backpack.
Inside the bag in expanded mode, I've been able to fit:
7D body w/ 17-55 f/2.8 attached (hood inverted), 10-22 lens and hood separately, circular polarizer, graduated filter, lens cleaning stuff, sunblock, remote trigger, batteries, memory, large ziplock bag, 100-400 telephoto, GPS. And it can take a 3/4-liter water bottle on the outside and a cliff bar, maps on the outside as well.
If I'd carry more, it would be tripod and macro lens.
