Get an old Kitchenaide stand mixer with the grinder attatchment. The stand mixers made within the last 20 years aren't built as well -- in this case, older is better. Put peanuts through grinder and you'll be happy. Just make sure you keep the unused peanuts in the deep freeze so they don't go rancid between peanut butter making sessions. That's the big plus of making peanut butter at the Co-op -- high turnover so the peanuts being ground are fresh.

so using a meat grinder is the better way to go over a food processor? does anyone have a recommendation? (i'm no cook...) and while it sounds like most people like adams or other jarred organics, i find them less appealing. but, freshly made PB is awesome, and i'm willing to pay the $ for the taste and convenience of freshly made PB.

I think my favorite is the almond butter you can get at Costco.

My wife gets my new favorite (crunchy) peanut butter from Trader Joes or Madison Market. It comes in a small jar and has flax seed oil and seeds in it. Yummy and crunchy.

The other (often overlooked) option is Skippy's natural peanut butter. IIRC, it didn't separate at all, but I don't remember whether it's free of hydrogenated oils...
Yes, it's free of hydrogenated oils. Tastes great too IMO. Much better than Adams. http://en.wikipedia.org/wiki/File:Skippynatural.jpg

Sunflower butter=Trader Joe's or PCC or Whole Foods. TJ's is cheapest.
